Ingredients

- 4 cups corn kernels (fresh or frozen)
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh cilantro
- 1/4 cup diced red onion
- 1 jalapeño, seeded and diced
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- In a large bowl, combine the corn, mayonnaise, sour cream, feta cheese, cilantro, red onion, jalapeño, lime juice, and chili powder.
- Mix well until all ingredients are evenly coated.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.

- For a smoky flavor, you can grill the corn before adding it to the salad.
