- 2 pounds beef chuck, cut into bite-sized pieces
- 1 pound baby potatoes, halved
- 1/2 cup unsalted butter
- 6 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- In a slow cooker, add the beef chuck and baby potatoes.
- In a small saucepan, melt the butter over medium heat and add the minced garlic, salt, pepper, thyme, and rosemary. Stir to combine.
- Pour the garlic butter mixture over the beef and potatoes in the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender.
- Once cooked, garnish with fresh parsley before serving.

- For extra flavor, you can add onions or carrots to the slow cooker.
