Ingredients

  • 1 cup plain yogurt
  • 1/2 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the rolled oats, yogurt, honey (or maple syrup), and eggs until well combined.
  3. Add the baking powder, baking soda, and vanilla extract, and mix until smooth.
  4. Gently fold in the mixed berries.
  5. Pour the batter into a greased cake pan.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
