Ingredients

- 1 cup rolled oats
- 1 cup plain yogurt
- 1/2 cup honey or maple syrup
- 2 eggs
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 cup mixed berries (strawberries, blueberries, raspberries)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the rolled oats, yogurt, honey (or maple syrup), and eggs until well combined.
- Add the baking powder, baking soda, and vanilla extract, and mix until smooth.
- Gently fold in the mixed berries.
- Pour the batter into a greased cake pan.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool before serving. Enjoy!
Notes
- For a vegan version, substitute eggs with flax eggs.
- Feel free to use any berries of your choice.
